Skillet Kabobs

Don't let the rain keep your from your Kabobs.  While they are great on the grill, cooking them in a cast iron skillet is a great alternative which tastes amazing!  

Caribbean Steak Skillet Kabobs


Citrus-Spice Caribbean Marinade:
1/4 c olive oil
2Tbsp orange juice
2 Tbsp lime juice
2-4 Garlic cloves, minced
1/2 c chopped onion
2 tsp ground black pepper
1 tsp ground cumin
1 tsp salt
1 tsp ground ginger
1/2 tsp nutmeg
1/2 tsp cinnamon
1 dash ground cloves
1 tsp chili powder



Recipe:
Combine all ingredients in either a zip-lock bag or a bowl.  Cube the steak and add to marinade.  Let the meat soak in the marinade for at least two hours.

While the meat is marinading, cut your choice of vegetables into 2 inch squares.  For this recipe I chose to use red, yellow, and orange peppers, along with red onions.  Set aside.

Once the meat has sat for at least 2 hours, begin to prepare the kabobs.  Place vegetables and steak on skewers alternating each.


Once they kabobs are assembled, add oil to the skillet and heat.  Once the oil is hot, place kabobs in skillet and begin cooking.  Cook time varies depending on how rare you want your steak.  Start with a few minutes on each side and add more time if desired.

Remove kabobs from skillet and serve.



You can choose to do this same recipe without the skewers.  Because I was hosting a group of people, it made it easier for everyone to be able to grab a skewer!
