Funfetti Sugar Cookie Bars

Summer is in full swing and I think it's time for a sweet little treat!  No one wants to spend any time in the kitchen slaving over a hot stove in this heat ... But let me tell you how worth it these babies are!   They are easy to throw together and really they just look great.  The flecks of color throughout the batter add a sweet crunch to this fudge-like, moist bar. {I really hate to use the word "moist", which, in my opinion, is one of the worst words in the English language.... But these bars are indeed moist, chewey and delish!}. Perfect for kids and adults alike and a great take along to summer parties!

Funfetti Sugar Cookie Bars

1 cup white chocolate chips
6 tbsp softened butter
3/4 cup granulated sugar
2 eggs
Dash of salt
2 tsp vanilla extract
1 1/4 cup all purpose flour
1/4 cup nonpareil sprinkles
2-3 tbsp nonpareil sprinkles for topping

Preheat oven to 350.  Grease an 8x8 pan with butter or cooking spray.

In a microwave safe bowl, melt chocolate chips and stir until smooth.
Using a hand mixer or stand mixer, add butter, sugar and eggs to melted white chocolate and mix until combined. Add salt, vanilla and flour to batter. Fold in sprinkles and pour into prepared pan.  Top batter with more sprinkles.  Bake 22 minutes or until edges begin to brown.  Let cool for 30 minutes before cutting into bars.
