Elvis French Toast

Happy Thursday!  This week is just flying by which is great because I'm always living for the weekends.  But if you're like me, I've been spending more time at home (new baby) and less time out brunching on weekend mornings.  If you're looking for a way to shake up your weekend breakfast this french toast is it!  
Sweet and savory and full of flavor ... it will be a crowd pleaser for all!  Picky eaters?  Just move that bacon to the side! 

*Special Tip: to get my peanut butter drizzled perfectly I put it in a ziplock bag, microwave for 25 seconds and snip a tiny hole in the corner of the bag then use it to squeeze the peanut butter all over my french toast! 


Elvis French Toast 
serves 4

1 loaf french bread, cut into 8 slices
8 eggs
1/3 c. milk
1/4 tsp cinnamon
dash of salt
1 teaspoon vanilla
butter
4 tablespoons peanut butter
2 bananas, sliced
8 slices bacon, cooked
powdered sugar for dusting
syrup for serving, if desired

Whisk eggs, milk, cinnamon, salt and vanilla in a large bowl until combined.  Heat a large skillet over medium-high heat and melt butter.  Dip each slice of bread in egg mixture and add to the skillet, do not overcrowd pan.  Cook each bread slice until golden brown on each side.  Remove from skillet.  

Microwave peanut butter in ziplock bag, snip the corner and drizzle each slice of french toast with peanut butter.  Top with sliced bananas and slice of bacon.  Dust with powdered sugar and maple syrup if desired.  Enjoy!
