BBQ Panzanella Salad

For an easy dish that is sure to impress at your 4th of July BBQ, try this Panzanella salad!  This is really easy to make and tastes delicious paired with your main dish!



BBQ Panzanella Salad

Dressing:
1/3 c. BBQ sauce
1 tbsp grainy mustard
1/4 c. Apple cider vinegar
Combine ingredients in a jar and shake to combine

Salad:
1 baguette cut into bite sized pieces
Olive oil (for drizzling)
1 zucchini, thinly sliced 
1 can sweet corn, drained
1 small red onion, thinly sliced
3 scallions, thinly sliced
1 handful fresh cilantro, chopped
4 oz crumbled feta cheese

Preheat oven to 350.  Arrange bread cubes on a baking tray and drizzle with olive oil. Toss. Bake until beginning to brown on the edges, about 5 minutes.  Remove from oven and set aside.
Toss remaining ingredients in a large bowl.  Add bread cubes and dress with BBQ dressing.  Toss and serve immediately.
