Spinach and Artichoke Dip Pizza

It's been a long time since I've been active in the blog world.... 

I've been spending time thinking about my blog and my lifestyle - trying to desperately marry my two interests (cooking delicious food and keeping a healthy and active body) to no avail. With some exceptions (what I like to call "skinny chow") most of the recipes I have posted aren't the most healthy - and while I've never filled my blog with artery cloggers or a plethora of fried food, I do know that I can do better when it comes to the recipes on Hangry Gal! 

My goal isn't to change the blog into a blog for typical "diet food".  What I'm trying to do is show you all that you can eat the foods you love, not feel deprived or restricted and achieve your goals when it comes to your body. 

Over the next few months, I hope to open your eyes to the way I have been keeping my body healthy and I'm starting with this delicious recipe that I've been making for myself over and over again! It's a flatbread pizza and its all yours !! This entire pizza is less than 500 calories, full of protein and healthy carbs, and most importantly, full of creamy flavor!! 

Cubed chicken, spinach, artichokes, laughing cow cheese and light sour cream, along with some spices, create this dreamy flatbread....

Spinach and Artichoke Dip Pizza with Chicken (makes one pizza)

1 Joseph's Lavash Flatbread
2 wedges Laughing Cow Cheese (I used garlic and herb flavor)
2 tbsp light sour cream
1 c. artichoke hearts, chopped
1 c. Frozen spinach, thawed and squeezed dry
4 oz baked chicken breast, diced
Salt, pepper and red pepper flakes to taste 

1. Preheat oven and pizza stone to 450. Place Joseph's Lavash on hot pizza stone and bake until lightly browned and crisp, flipping once, about 5 minutes. Remove from oven and set aside. Keep oven hot. 
2.  In a microwave safe bowl, combine remaining ingredients. Microwave for 1 minute. Remove from microwave and stir to combine. 
3. Spread mixture on lavash and place in oven.  Bake for 5 minutes until topping is hot. Remove from oven, cut and enjoy!

Nutrition facts : (entire pizza) 457 calories, 28g carbohydrates, 14g fat, 55g protein
