Chile-Lime Roasted Cauliflower


Let me introduce you to something that has changed my life.... Roasted Cauliflower.  If you haven't roasted your cauliflower then please, stop what you are doing and throw some in the oven immediately!  I'm not kidding...  roasting cauliflower completely changes the flavor of this sometimes borrriiinnnggggg veggie.  My usual recipe just includes a little lemon juice, salt, pepper and a smidgen of olive oil, but today I'm pumping up the flavor a bit.  The chili-lime flavored cauliflower can not only be used as a delish side dish, but also consider using it as a meatless taco filling.


Chile-Lime Roasted Cauliflower

1 head cauliflower, cut into small florets
the zest of 1 lime
the juice of 2 limes
1 tbsp chile powder
2 tsp red pepper flakes
salt to taste
2 tbsp olive oil

Preheat oven to 425.  In a bowl, combine all ingredients and gently toss.  Transfer cauliflower to an oven safe dish and spread out into a single layer.  Roast cauliflower for 15-20 minutes, stirring halfway through, until tender and edges become crispy.
